Falling Back Into Blogging

Remember that time it was January 1, 2017 and then eight months passed? Oh hey. Here I am again!

I'd burst into apologies but, this is kindof my bit. Call me the inconsistent blogger: sporadically gracing your blog feed since 2002. Once again, I have emerged from digital hibernation to plaster the internet with cries of autumnal celebration!

August, it may be. But, the "-Ber" months are upon us. Thusly, Pumpkin Spotting 2017 begins! If you're on the hunt for pumpkin anything, you will not have to search high and low. We will, undoubtedly find ourselves graced with its presence in an unprecedented way shortly. And I will be with you every step of the way.

A subtle sprinkling of pumpkin goodies have started to trickle through the aisles of Target, classics and new products alike. Enjoy!

Pumpkin Spotting (Part 4)

I'd love to say I'm above the trend of falling victim to every pumpkinized product out there.

But, I'm not.
In fact, I'm so far INto the trend, that I want to wrap myself up in it all day until I become the Violet Beauregarde of pumpkins and turn into a big, fat, round orange gourd of awesome.

My mission to conquer the pumpkin is steadfast and resolute (as one Billy Shakespeare might say) and I'm not stopping until I've squeezed the last drop of pumpkin juice from the Wizarding World of Harry Potter (amazeballs, so good).

But, no mission is complete without an army. Thusly, I'm bringing you along so that you may not be left behind in the dust of empty store shelves and barren Starbucks cups stained in drunken syrup and cinnamon remnants.

Here are my latest and greatest pumpkin finds:
 1. Pumpkin Bread Loaf (Found At Bob Evans Restaurant): Timothy was working a long day so I decided to bring him some dinner at work. Bob Evans has an amazing "Family Meals-To-Go" deal happening right now where you can get an entree, two sides, and bread for 23 bucks. And it is a MASSIVE meal. I already had leftovers and there is STILL enough for another meal. PLUS, the bread? Yeah, it's an entire loaf. And they have pumpkin bread. And it is awesome. 

2. Pumpkin Pie Supreme (Found At Bob Evans Restaurant): Once I caught on to all of the pumpkin stuff Bob Evans had been hiding from me in the bakery, I had to get my mitts (do people still even say that?) on this. It's basically pumpkin pie with a layer of cheesecake. It's pretty yummy but I prefer Olive Garden's pumpkin pie cheesecake.

3. Pumpkin Pie Chocolate (Found At World of Chocolate Museum): Look how pretty and decadent that little white chocolate pumpkin morsel is. It was, as my husband likes to say, "Good, not great."

4. Nature's Own Pumpkin Spice Oatmeal Toasters (Found From MY MOM): My mom sent these to me in the mail and they are FRIGGIN' awesome. I have no clue where she found them. I can't even find them ONLINE! They are amazing with a pad a butter or, even better, apple butter. Yes. Yes. Oh em gee, yes.

Pumpkin Praline Pretzels


Doesn't that alliteration just make you think of the pumpkin flavored sense of awesome that only Heaven can taste like? Say it with me: Pumpkin. Praline. Pretzels. Take it in.

I'll give you a moment to recuperate.


Alright, let's get back to business.

This might be one of the most difficult things I've ever made. But, it also might be one of the best things I've ever made.

There's nothing HARD per se about making these. But, they are time consuming. And you'll probably want to wear an apron as things WILL get messy. In the end, it will all be worth it when you take that first, amazing, decadent, delicious, scrumtralescent bite.





// INGREDIENTS // 
Pumpkin Praline Topping:
1/2 cup light brown sugar
1/4 cup unsalted butter
3 Tablespoons milk
1 Tablespoon pumpkin puree
1 cup confectioners' sugar

Pretzel Dough:
1 packet Fleishmann's Yeast
1 and ½ cups warm water
1 teaspoon salt
1 Tablespoon light brown sugar
4.25 cups all-purpose flour
9 cups water
2/3 baking soda

Pumpkin Spice Sugar Topping
2 Tablespoons melted butter
1/3 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground pumpkin pie spice
1/2 teaspoon ground cloves

// DIRECTIONS // 

1. Preheat oven to 425 degrees. Line two large cookie sheets with tin foil (spray if using foil) or parchment paper.

2. Make the praline topping first- Following this recommended order to things will make the pretzel making process go by much faster! Add the brown sugar, butter, and milk to a small saucepan over medium heat. Whisk the mixture continuously. Once it is smooth, bring to a boil for 1 minute without stirring. Remove from heat and stir in the pumpkin and confectioners' sugar until smooth. Set aside and allow to thicken for at least 20 minutes.

3. Make the pretzels: Whisk in yeast with 1.5 cups warm water until it dissolves completely. Whisk in the salt and brown sugar. Slowly add the flour 1 cup at a time. Mix with a large wooden spoon (or plastic; not silverware!) until dough is thick and not sticky. After 4 cups of flour. A tip from Sally's Baking Addiction to tell when you've hit the right consistency: Poke the dough with your finger. If it bounces back, it is ready to knead. If not, add a bit more flour.

Place the dough onto a floured surface. Knead the dough for approximately 3 minutes and shape into a ball. Cut into 8-9 segments. Roll each section into a 20-inch rope with an even diameter.

Another tip from Sally: "Take the ends of the rope and form a giant U shape. Take the ends, twist them, and bring them in towards yourself creating a pretzel shape."

Whisk 9 cups of water and baking soda together in a large pot and bring to a boil. Place a pretzel onto a large slotted spatula and dip into the boiling water for 30 seconds. The pretzel will float. Lift the pretzel out of the water and place onto greased baking sheet. Repeat with the rest of the pretzels. Bake for 10 minutes.

4. While the pretzels are in the oven, melting butter in a small bowl. Mix granulated sugar and spices together in another small bowl. Once the pretzels are golden brown, remove the pretzels from oven and brush with the melted butter. Generously sprinkle with the sugar/spice mixture. Place back into the oven and bake for another 5 minutes. Remove from oven and sprinkle with more sugar/pumpkin spice if desired.

5. Lastly, drizzle your praline topping to desired amount on top of the pretzels. Voila! Brush yourself off and eat up. You did it!

1. Pumpkin Frozen Yogurt (Found At Menchies): Oh. My God. Had mine with some yogurt chips and cheesecake bites. You don't want to miss this greatness.

2. Pumpkin Cream Smoothies (Found At Wawa): This was pretty delicious although it tasted a bit more like a Chai Frappucino from Starbucks (which is also amazing). I'm curious as to how it compare's to their Pumpkin Milkshake!

3. Way Better Snacks: Punkin Cranberry Tortilla Chips (Found At World Market): My aunt first introduced me to the Way Better Snacks product line with their Sweet Potato chips with which I immediately fell in love. My sweet, sweet hubs gave me these delicious treats for our anniversary which pair beautifully with the...

4. Frontera Limited Edition Chipotle Pumpkin Salsa (Found At World Market): Yes. Yes. And more yes. Sweet and spicy all up in mah mouth!

Pumpkin Spotting (Part I)

Here are my latest and greatest pumpkin finds:

1. Pumpkin Spice Kraft Jello Pudding (Found at Wal-Mart): I haven't tried this yet. But, it looks magical. And that's all that matters. Anyone tried it?

2. Pumpkin Spice Philadelphia Cream Cheese (Found at Harris Teeter): My mom introduced this to me and holy cannoli was it epic. Not too sweet but with a perfectly spicy hint of pumpkin to take your English Muffin to the next level.

3. Kraft Jet-Puffed Pumpkin Spice Mallows Marshmallows 8 oz (Found at Wal-Mart): I am pleasantly surprised to find these back on the shelves after a discovering them a year or so ago. And I'm wondering why I haven't tried them in a s'mores fashion yet. Yummo.

4. Pumpkin Cheesecake Donuts (Found at Krispy Kreme): Not going to lie. As enticing as these sound and look, they frankly tasted like a plain old custard filled donut. I barely noticed a pumpkin flavor. I preferred the regular pumpkin donuts though they weren't as pumpkin-y either. Give them a go for the sake of the pumpkin if you like.

5. Trader Joe's "This Pumpkin Walks Into A Bar..." Cereal Bars (Found at Trader Joe's): These, by far, take the cake. Or bar, as it were. These are divine and delectable and you don't even have to feel bad about eating them. Fine way to start the day!
